At few years ago using Windows' earlier version was a treat. Ask those who started computers with DOS. Now there are much more choices for users.
Choosing the software you need, is one of the important decisions. Assuming that you have decided to the shop for operating system for your computer, you will need to decide whether you want to use the Mac or a Windows operating system. Both perform similar tasks, though they are different in their appearance and functionality. Many users think Mac OS X is more stable, secure and easier to use than Windows. This debate aside, Windows is compatible to more number of gadgets people need to connect with computers, such as mobile phones, sat-nav systems and portable media players to name just a few.
Those who choose Vista will need to pick the version that suits them best. For consumers, Vista comes in three different forms: Home Basic, Home Premium and Ultimate. Upgrades from XP are possible. There is only one version of the latest Mac OS X (Leopard), which is bundled with all new Macs. You can also upgrade an older version of OS X to Leopard. If you move from Vista Home Basic through to Ultimate, you will get more features. Like Home Basic does not come with the new aero screen appearance of the Premium and Ultimate versions. Similarly, only Vista Ultimate ships with Windows Bit Locker Drive Encryption to encrypt your private data and Shadow Copy for easy back-up.
MS office is another utility without which most users cannot live. Buying Office packaged with a new computer is cheaper than buying it later off the shelf. By the way, there are many applications (like OpenOffice) that do a similar job to Office -- and some of them are online rather than installed on your machine. For email and as a replacement for Microsoft Outlook, users can have the Vista mail program included with all versions of Vista. Free alternatives include Thunderbird or web-based email such as Gmail or Hotmail.

Since Apple switched from the PowerPC chips to Intel processors some time ago, there really is very little different between the hardware in an iMac and a standard PC.
Sure, there are some differences with chipsets and such... but the really important pieces, namely the Processor, the RAM, the hard drives and the video chipset, are almost identical between a Mac and a PC.
What does this mean to you in terms of your question? The short answer: if you are installing Vista on you iMac, don't think of it as an iMac... instead, take the specs and think of it as a PC because, in a very real-world sense, that is exactly what you have.
So you will have a Vista PC running whatever processor you have with 2 GB of memory.
2 GB of memory is a good average amount and is more than enough for you to run the Sims 2.
And no, installing Boot Camp and Vista won't slow down your Mac... when you boot into one, it is as if the other does not exist. When you boot into the Mac OS, the Vista OS is not running nor doing anything... so all the iMacs resources are available to the Mac OS. Same with Vista... when you boot into Vista, the Mac OS is totally off and not using any resources. The only thing you WILL notice is that you have to allocate a certain portion of your hard drive to create the Windows partition. So if you currently have a 250 GB hard drive and you create a Vista partition of 50 GB, you will now have only 200 GB free on your Mac partition. This won't slow your computer... but it does decrease your storage space.

**ADDENDUM**
After reading the response below (and no offense meant to a fellow poster... I'm just adding some notes from personal experiences) I just wanted to comment that you should have NO issues installing Windows Vista on a Mac computer. Mac has done a fantastic job with Boot Camp... it runs extremely well. I personally run Windows Vista Ultimate 64-bit on a MacBook Pro and it runs without a flaw. In fact, I would be hard pressed to tell the difference between Vista on my MacBook Pro and Vista on my desktop PC.
So if you do want to go the Boot Camp/Vista route, you should have no problems.
As far as running Ubuntu Linux... you said you don't know a lot about computers, so this is not a good solution for your specific case... Ubuntu is nice, but requires some knowledge of computers and drivers in order to tweak the system... and even further technical knowledge to try and tweak it so that the Sims 2 will run properly on your hardware. For someone with little computer knowledge, the Boot Camp/Vista is the best solution. Apple has created Boot Camp to pretty much "hold your hand" through the setup process, so you should have little difficulty getting up and running.
